根据CAC工作程序手册(1997年,第10版),与食品安全有关的风险分析术语的定义如下,需要说明的是,风险分析是一个正在发展中的理论体系,因此有关术语及其定义也在不断地修改和完善。 危害(hazard):潜在的将对消费者健康造成不良效果(事件)的生物、化学或物理因素。 风险(risk):将对人体健康或环境产生不良效果的可能性和严重性,这种不良效果是由食品中的一种危害所引起的。 风险源(risk source):具有潜在的引发不良效果的药剂、媒介物、商业/工业加工过程、加工步骤或加工场地。 风险分析(risk analysis):指对可能存在的危害的预测,并在此基础上采取的规避或降低危害影响的措施。由风险评估、风险管理和风险交流三部分共同构成的一个过程。 (07/03/2006 08:43:32) [查看全文] White wine is the product of the fermentation of pure grape juice obtained from grapes by extraction from grapes.
